Sushi Hyun: New luxury omakase restaurant opening soon

Vancouver seems to have an undiminished need for upscale sushi restaurants, as yet another new concept is set to launch in the city.

Sushi Huynh describes itself as an “upscale, authentic, reservation-only sushi omakase restaurant,” according to a job posting posted online by the new company.

The operation will be so intimate that Sushi Hyun will only accommodate “less than 10 guests at a time.”

More specifically, Sushi Hyun’s Instagram page (@sushihyun_vancouver) indicates that the new restaurant only plans to accommodate six guests at a time.

The plan is to start with one seating for lunch and one for dinner, then add a second seating.

The new, upscale sushi bar will soon open its doors at 795 Jervis St. The address was previously home to Ssong’s Hot Dogs, a branch of the South Korean franchise that stayed in the business for about a year before quietly leaving.

Previously, 795 Jervis St was home to several restaurants, including Koyuki Sapporo Ramen, Argan Bistro and Le Bretagne Creperie.

A business license has been issued for Sushi Hyun, and in its job listing the restaurant says it hopes to open when July ends or August begins. No date has been announced yet.

Currently, it appears that Sushi Hyun only has an Instagram page as an online presence.

“At Sushi Hyun, we believe that dining is more than just enjoying food – it’s an experience,” operators describe on social media, adding that the name “Hyun” means “lightness and positivity.”

No menu details are available, but Sushi Hyun notes in a job posting that they hope to hire staff who are “dedicated to customer service and passionate about wine, sake and sushi,” but that the restaurant will not serve red wine.
